Peameal bacon is Toronto’s great culinary invention, created in the 1850s by William Davies at the St. Lawrence Market, who rolled brined back bacon in ground yellow peas to preserve it. The cornmeal coating we use today came later, but the sandwich remains the same: thick slices of the sweet, juicy bacon, fried until the crust crisps, and stacked high on a kaiser roll. Visitors line up at market stalls like Carousel Bakery for this very sandwich, and it’s been feeding hungry Torontonians for well over a century.

What makes it great is the contrast — salty-sweet, tender pork with a golden, crunchy cornmeal crust, all mopped up by a soft bun and sharpened with mustard. It’s a hearty, no-nonsense lunch that tastes like the city itself: fast, friendly, and full of flavour. And when the peameal sizzles in the pan, your whole kitchen smells like a Saturday morning at the market.

Step by stepInstructions

  1. Mix the cornmeal, flour, and black pepper in a shallow dish, then press each slice of peameal bacon into the mixture so both sides are well coated.
  2. Heat the butter and oil in a large skillet over medium-high heat until sizzling.
  3. Cook the bacon slices in a single layer for 3 to 4 minutes per side, until golden brown and crisp at the edges, working in batches if needed.
  4. Split the kaiser rolls and toast them cut-side down in the same skillet until lightly golden.
  5. Spread a generous swipe of mustard on the bottom half of each roll, pile on the hot bacon, and close the sandwich before serving right away.

💡 Chef tips & storage

Don't rinse the peameal — the cornmeal crust is what makes it special. Ask your butcher for slices about half an inch thick so they stay juicy inside the crisp coating. Leftover cooked peameal keeps in the fridge for 3 days; reheat in a hot skillet, not the microwave.
