The beauty of good corn is that it needs almost nothing: a few minutes in boiling water or a turn over hot coals, then a generous swipe of butter and a sprinkle of salt. Sweet, juicy, and unapologetically simple — the way summer food should be.

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the husked corn and boil for 4 to 5 minutes, until the kernels are tender and bright yellow.
  3. Drain the corn well and let it stand for a minute so it stops steaming.
  4. In a small bowl, mix the softened butter with the salt, pepper, and chives or paprika, if using.
  5. Slather the hot corn generously with the seasoned butter and serve immediately.

Do not overboil — fresh corn needs only 4 to 5 minutes, or it turns mushy. For a smoky twist, grill the corn in its husk over hot coals for 15 minutes, turning often, then peel and butter it. Season the butter while the corn cooks so it is ready to go.
