Prairie oysters — Rocky Mountain oysters to our southern neighbors — are a proud rodeo and community-supper tradition across the Canadian west. Born of the old farm rule that nothing goes to waste, they became a dare and a delicacy all at once, served at fairs, rodeos, and harvest gatherings with a wink and a cold beer.

Done right, they are surprisingly delicious: tender on the inside, craggy and golden-crisp outside, with a peppery, well-seasoned crust. Served hot with lemon and a good dipping sauce, they are the appetizer that starts conversations and settles bets about who is brave enough to try one.

Step by stepInstructions

  1. Rinse the oysters well, then remove the tough outer membrane and slice them into 1/4-inch rounds.
  2. Soak the slices in the buttermilk for 30 minutes in the refrigerator.
  3. In a shallow dish, mix the flour, cornmeal, salt, black pepper, cayenne, and garlic powder.
  4. Dredge each slice in the seasoned flour mixture, pressing to coat evenly.
  5. Heat about 1/2 inch of oil in a deep skillet to 350°F.
  6. Fry the oysters in batches for 2 to 3 minutes per side, until golden brown and cooked through.
  7. Drain on paper towels, season with a little extra salt, and serve hot with lemon wedges and dipping sauce.

💡 Chef tips & storage

Removing the outer membrane completely is essential for the right texture — it is slippery, so take your time. Fry them hot and fast so the crust crisps before the inside overcooks. They are best eaten immediately, while still hot.
