Home cooks would fold the fish into a creamy potato-and-onion filling and bake it under a flaky crust — a practical, delicious way to stretch a prized catch.

  1. Preheat the oven to 375°F and line a 9-inch pie plate with one round of pastry.
  2. In a skillet, melt the butter and cook the onion and potatoes over medium heat until the potatoes are just tender, about 10 minutes.
  3. Sprinkle the flour over the vegetables, stir for 1 minute, then whisk in the milk and cook until the sauce thickens.
