İmam Bayıldı olive-oil stuffed roasted eggplant with onion and tomato

İmam bayıldı translates as the imam fainted, and legend says the local imam swooned when his wife served him this dish — either from delight, or from shock at the olive oil she used. Eggplants are slit open, filled with sweet onions, tomatoes, and garlic, and braised slowly in olive oil until utterly tender. It is a cornerstone of the meze table, served cool with bread to mop up the juices. This is vegetarian cooking at its most generous, with no meat needed to make it memorable.

Slow cooking turns the eggplant silky and sweet, absorbing the olive oil like a sponge, while the onions collapse into a jammy, garlicky filling. It tastes even better the next day, once the flavors have settled, which is why Turks always make extra. Do not be shy with the olive oil — it is the whole point of the dish. The filling should be sweet and deeply seasoned, so every spoonful tastes of the sun.

Step by stepInstructions

  1. Peel the eggplants in stripes, leaving some skin. Slice each one in half lengthwise.
  2. Salt the cut sides and let them sit 30 minutes to draw out bitterness. Pat dry.
  3. Heat 1/2 inch of olive oil in a skillet and fry the eggplant halves, cut side down, until golden, about 3 minutes per side. Drain on paper towels.
  4. In the same skillet with 3 tablespoons of fresh olive oil, cook the onions over low heat until very soft and golden, about 15 minutes. Add the garlic and cook 1 minute.
  5. Stir in the tomatoes, tomato paste, parsley, salt, pepper, and sugar and cook until thick, about 8 minutes.
  6. Preheat the oven to 350°F. Arrange the eggplant halves in a baking dish, cut side up, and spoon the filling over each.
  7. Pour the hot water around the eggplants, cover with foil, and bake 35 minutes. Uncover and bake 10 minutes more.
  8. Cool to room temperature and serve with bread and lemon, spooning the juices over the top.
