Golden pistachio baklava with flaky phyllo layers and syrup

Baklava is Turkey’s most famous export, and the city of Gaziantep guards the title of making the best in the world. Paper-thin layers of phyllo are brushed with butter, layered with chopped walnuts, and baked until deep gold, then soaked in a syrup of sugar, water, and lemon. Pistachios are the classic Gaziantep filling, but walnuts make a beautiful, more affordable home version. It is the dessert of holidays and weddings, cut into diamonds and served with strong Turkish coffee.

A thousand leaves, a single shatter

The phyllo shatters delicately under the fork, saturated with syrup but never soggy, while the walnut filling adds crunch and a toasty depth. The syrup gives it a glossy sheen and a clean sweetness balanced by lemon. Keep the phyllo covered while you work, pour cool syrup over the hot pastry, and give it a full night to absorb before cutting. A whole clove pressed into each diamond perfumes the syrup as it sets, and the butter is what creates those crisp, flaky layers, so brush generously.

Step by stepInstructions

  1. Preheat the oven to 350°F. Butter a 9x13-inch baking dish.
  2. Mix the walnuts, 1/2 cup sugar, and cinnamon in a bowl.
  3. Layer 10 sheets of phyllo in the dish, brushing each sheet with melted butter and keeping the rest covered with a damp towel.
  4. Spread half the walnut mixture over the phyllo. Top with 5 more buttered sheets, then the remaining walnuts, then the remaining phyllo, buttering every sheet.
  5. Cut the baklava into diamonds with a sharp knife. Press a clove into the center of each piece.
  6. Pour any remaining butter over the top and bake until deep golden brown, 45 to 50 minutes.
  7. Meanwhile, make the syrup: simmer the 1 1/2 cups sugar, water, and lemon juice for 10 minutes, then cool completely.
  8. Pour the cool syrup over the hot baklava and let it absorb overnight, uncovered, before serving.

💡 Chef tips & storage

Keep the phyllo covered and work quickly; dry phyllo shatters instead of layering. Pour cool syrup over hot baklava, then give it a full night to absorb.
