Lubia Polo

Lubia polo is the kind of Persian home cooking that rarely appears on restaurant menus but shows up constantly in family kitchens. The rice comes out fluffy and tinted with tomato, studded with tender green beans and savory bits of beef. Step by stepInstructions

  1. Rinse and soak the rice in salted water for 30 minutes.
  2. Heat the oil in a skillet and cook the onion until golden. Add the beef and turmeric and cook, breaking it up, until browned, about 8 minutes.
  3. Add the tomatoes, salt, and pepper and simmer until the sauce thickens, about 10 minutes.
  4. Add the green beans and cook 5 minutes more.
  5. Parboil the rice in boiling salted water for 6 minutes and drain.
  6. In a heavy pot, layer half the rice, the beef and bean mixture, then the rest of the rice. Drizzle with the butter and 3 tablespoons of water.
  7. Cover with a towel-wrapped lid and steam over low heat for 40 minutes.
  8. Toss gently before serving.

Use thin, tender green beans and cut them into short pieces. Simmer the tomato sauce until it is thick before layering, or the rice will turn soupy.
