Tabbouleh - herb-green parsley salad with bulgur and mint

Tabbouleh is the fresh-faced cousin on every Levantine mezze spread, and in Syria the parsley is the point: this is a herb salad that happens to include bulgur, not the other way around. The fine bulgur is soaked, never cooked, and tossed with tomatoes, mint, and a generous pour of lemon and olive oil. It is a summer dish, cool and bright, served with crisp lettuce leaves for scooping. Restaurants may fuss with the proportions, but home cooks know the truth — more parsley, more lemon.

Chopped fine and dressed generously, tabbouleh is crisp, tart, and refreshing, with the chewy bulgur giving it just enough substance. The trick is very dry bulgur and very small dice, so every forkful is balanced and bright. Serve it chilled, do not be shy with the lemon, and eat it the same day it is made — freshness is the whole idea.

Step by stepInstructions

  1. Soak the bulgur in hot water for 15 minutes, then drain and squeeze it very dry in a kitchen towel.
  2. Finely chop the parsley, tomatoes, cucumber, and mint, and combine in a large bowl with the green onions.
  3. Add the bulgur to the bowl.
  4. Whisk the lemon juice, olive oil, salt, and pepper, and pour over the salad.
  5. Toss well, taste, and add more lemon or salt as needed.
  6. Let it sit for 10 minutes, then serve with crisp romaine leaves for scooping.

💡 Chef tips & storage

Dry the soaked bulgur very well — squeeze it in a kitchen towel — or the salad will turn watery. In Syria the parsley should clearly outnumber everything else.
