Fish pie came to New Zealand with British settlers and found a natural home in a country surrounded by some of the world’s best seafood. Kiwi versions often use flaky white fish like tarakihi or snapper, sometimes with a little smoked fish for extra depth, under a cloud of creamy mashed potato.

It’s the perfect cold-night dinner: a rich, buttery sauce studded with fish and sweet peas, crowned with golden, crisp-edged mash. Serve it straight from the dish with a green salad on the side.

Step by stepInstructions

  1. Boil the potatoes until tender; drain, mash with butter, salt, and a splash of milk, and set aside.
  2. Poach the fish in the milk for 8–10 minutes until just cooked; lift out and flake, reserving the milk.
  3. Sauté the onion in the butter, stir in the flour, then gradually whisk in the reserved milk until thick.
  4. Fold in the flaked fish, peas, and cheese; season and pour into a baking dish.
  5. Top with the mash, brush with egg yolk, and bake at 400°F for 25–30 minutes until golden and bubbling.
  6. Rest for 10 minutes before serving so the pie sets into neat slices.
