Mashed and creamed kumara has been a fixture of Kiwi roasts and Christmas dinners for generations. It’s the gentler, sweeter cousin of mashed potato, and its bright golden colour makes it the star of the plate.

Creamed kumara is pure comfort: sweet, velvety, and rich with butter and cream, with just a whisper of nutmeg. It pairs beautifully with roast lamb, pork, or ham.

  1. Boil the kumara in salted water for 15–20 minutes until very tender.
  2. Drain well and return to the pot over low heat for 1 minute to dry out.
  3. Mash until smooth, then beat in the butter and cream.
  4. Season with the salt, pepper, and nutmeg; beat until fluffy.
  5. Serve hot, topped with an extra knob of butter.
