Tongan Faikakai

Faikakai is a humble Tongan dessert with a devoted following: small dough dumplings (sometimes enriched with ripe banana) simmered gently in sweetened coconut milk until they puff up and soak in the sauce. It is the sweet grandmothers serve to visiting grandchildren.

The dumplings are soft and tender, the coconut milk silky and delicately sweet, often scented with vanilla or lemon zest. Serve warm in bowls with the sauce spooned generously over.

Step by stepInstructions

  1. Mix the flour, baking powder and salt. Stir in the mashed banana and enough water to form a soft, slightly sticky dough.
  2. Shape the dough into small walnut-sized balls and set aside on a floured tray.
  3. In a wide pot, combine the coconut milk, sugar, vanilla and lemon zest. Bring to a gentle simmer, stirring until the sugar dissolves.
  4. Drop the dumplings into the simmering coconut milk, cover, and cook for 15-20 minutes until puffed and cooked through.
  5. Serve warm with extra coconut sauce spooned over each dumpling.

Keep the heat low and gentle so the coconut milk doesn't split. The banana makes the dumplings extra soft — skip it for a firmer, more classic texture.
