Firi firi are the doughnuts of French Polynesia: sweet, coconut-scented dough twisted into ropes and fried until golden. Market stalls across Tahiti sell them warm in the morning, often served with coffee or vanilla custard.

Light and airy with a delicate coconut flavour, they are irresistible straight from the oil. Dust with sugar and eat them warm — preferably on a beach with coffee.

Step by stepInstructions

  1. Mix the flour, sugar, yeast and salt. Add the warm coconut milk, egg, butter and vanilla; stir into a soft dough.
  2. Knead for 8 minutes until smooth. Cover and rise for 1 hour, until doubled.
  3. Punch down and divide the dough into 12 pieces. Roll each into a 10-inch rope, fold in half and twist.
  4. Cover and rise for 20 minutes. Meanwhile, heat 2 inches of oil to 350°F.
  5. Fry the firi firi for 2-3 minutes per side until deep golden. Drain and toss in sugar. Serve warm.

💡 Chef tips & storage

Keep the oil at a steady 350°F so the doughnuts cook through without burning. These are best eaten the same day, fresh and warm.
