Roast pork is the grand centerpiece of the Samoan umu, where a whole pig is wrapped in banana leaves and cooked over hot stones for hours. Pua’a tunu is the home-oven version of that feast, using the same beloved soy, garlic, and ginger marinade that flavors island roasts. It is the dish served at weddings, birthdays, and church fundraisers, carved into generous slabs for a hungry crowd.

What makes it great: the long marinade and slow roasting transform the pork into something extraordinary — crackling-crisp edges, deeply savory caramelized glaze, and tender, juicy meat that pulls apart with a fork. Served with palusami, taro, and rice, it is the closest thing to a Samoan banquet you can make at home.

Step by stepInstructions

  1. Score the pork skin and flesh in a crosshatch pattern with a sharp knife.
  2. Mix the soy sauce, oil, garlic, ginger, onions, salt, and pepper and rub the mixture all over the pork, working it into the cuts.
  3. Marinate in the refrigerator overnight, or at least 4 hours.
  4. Preheat the oven to 350°F and place the pork in a roasting pan.
  5. Roast for about 30 minutes per pound, basting occasionally with the pan juices, until the internal temperature reaches 195°F and the meat pulls apart easily.
  6. Rest the pork for 20 minutes before shredding or slicing and serving with palusami, taro, and rice.

Do not rush the roast — the high internal temperature is what makes the pork shred like pulled pork. Save the pan juices to spoon over the meat.
