Lilikoi, the Hawaiian name for passion fruit, grows wild across the islands and flavors everything from butter to cocktails. These bars take the classic lemon bar and give it a tropical spin, using tart, fragrant lilikoi pulp in a silky custard.

What makes it great is the bright, floral tang of the lilikoi against a crisp, sweet shortbread base. Dusted with powdered sugar, they are sunshine you can hold in your hand.

  1. Preheat the oven to 350 degrees F and line a 9x9-inch pan with parchment.
  2. Pulse the flour, powdered sugar, and butter in a food processor until crumbly. Press into the pan and bake for 18 minutes until lightly golden.
  3. Whisk the eggs and granulated sugar until smooth, then whisk in the lilikoi pulp, flour, and salt.
  4. Pour the filling over the warm crust and bake for 22 to 25 minutes, until the center is just set.
  5. Cool completely, then dust with powdered sugar and cut into bars.
