The tradition stretches back to the days before refrigeration, when pickling was the way to keep fish through the holidays. The result is gloriously old-fashioned: tangy, sweet, gently spiced, and best after a few days of patient marinating.

Golden fried fish soaks up a curried vinegar and onion sauce that turns the fillets glossy and irresistible, with a sweet-sour brightness that wakes up the whole plate. The onions stay slightly crisp, and the whole dish is served cold, sliced and lifted onto bread with a spoonful of the pickle. Make it ahead, because every day in the fridge makes it better.

  1. Mix the flour, 2 tsp curry powder, 1 tsp turmeric, and salt in a shallow dish and coat the fish fillets.
  2. Heat the oil in a large skillet and fry the fish in batches for 3 to 4 minutes per side, until golden and cooked through. Drain on paper towels.
  3. In a large pot, soften the onions in a little oil over medium heat for 8 minutes, without browning.
  4. Add the remaining curry powder and turmeric and stir 1 minute.
  5. Pour in the vinegar, water, sugar, bay leaves, and peppercorns, and simmer for 10 minutes until the pickle is fragrant.
  6. Layer the fried fish in a deep glass or ceramic dish, spooning the hot pickle and onions over each layer.
  7. Cool, cover, and refrigerate for at least 3 days before serving cold.
