Beyaynetu means of many kinds, and that is exactly what this is: an entire vegetarian feast arranged on one platter. A large injera is lined with mounds of misir wat, shiro wat, atkilt wat, gomen, azifa, and key sir, then eaten by hand, with everyone tearing off pieces of injera and scooping up bites of each dish. It is the heart of Ethiopian fasting tradition — during Lent and other fasting days, this is what families share.

The beauty is in the contrast: spicy lentil stews next to mild cabbage and greens, tart beet salad next to creamy split peas, each bite different from the last. Because everything is laid out together, the meal becomes a slow, sociable procession around the platter rather than a race to the finish. Make the stews ahead so assembly is quick, arrange the colors in separate mounds so every person can reach each one, and fold the bottom injera up around the edges. It is the best introduction to Ethiopian food there is — every dish you could want, in one glorious circle.

Step by stepInstructions

  1. Lay a large injera on a big round platter so it covers the surface.
  2. Spoon the misir wat and shiro wat in separate mounds around the outer edge.
  3. Add the atkilt wat, gomen, key sir, and azifa in distinct piles between them.
  4. Fold the edges of the bottom injera up around the stews, if you like, and top with the yogurt.
  5. Serve with extra injera folded alongside for tearing.
  6. Eat by tearing off a piece of injera, pinching up a bit of each stew, and popping it in your mouth.
