Chechebsa begins with kita, a simple pan-baked flatbread, which is then torn into pieces and fried in niter kibbeh with berbere until every golden shred is coated in spiced butter. It is a highland breakfast classic, the kind of hearty morning meal that sticks to your ribs before a long day of work. In some homes a drizzle of honey goes over the top, balancing the warm spice with a little sweetness.

Torn bread, spiced butter, and a whisper of honey

The fried pieces turn crisp at the edges and tender in the middle, glossy with spiced butter and humming with berbere’s slow warmth. The honey, when you use it, melts into the butter and turns the whole skillet sticky-sweet around the edges of the heat. Serve it piled on a plate with a cup of tea or coffee, and eat it while it is hot — chechebsa is best the moment it leaves the pan.

Step by stepInstructions

  1. Whisk the flour, salt, and water into a smooth batter the consistency of thin pancake batter, adding a splash more water if needed.
  2. Heat a lightly oiled large skillet over medium-high heat and pour in a ladleful of batter; swirl to spread it thin.
  3. Cook until set and lightly golden on the bottom, about 2 minutes; flip and cook 1 minute more. Repeat with the remaining batter.
  4. Tear or cut the flatbreads into bite-size pieces.
  5. Heat the niter kibbeh in a large skillet over medium heat; stir in the berbere and cardamom and cook 1 minute.
  6. Add the torn flatbread and toss until every piece is coated and sizzling, 3-4 minutes.
  7. Drizzle with the honey, if using, and serve hot.

💡 Chef tips & storage

The batter should be thin enough to spread in the pan, like a crepe. If the skillet gets too hot, lower the heat so the butter browns without burning.
