  1. Heat the oven to 425°F. Rinse the birds, pat them dry, and season inside and out with salt and pepper.
  2. If the livers are included, chop them finely. Melt 2 tablespoons of the ghee in a pot and cook the onion until soft, about 5 minutes. Add the livers, if using, and cook until no longer pink.
  3. Stir in the rice, allspice, cinnamon, cardamom, salt, and pepper and toast for 2 minutes. Add the broth, cover, and cook over low heat for 10 minutes — the rice should be only half-done. Remove from the heat, stir in the pine nuts, and let cool.
  4. Stuff the birds loosely with the rice mixture and close the openings with toothpicks or skewers.
  5. Brush the birds with the remaining ghee and the olive oil and arrange them breast-side down in a roasting pan. Roast for 15 minutes, then turn breast-side up and roast until the skin is deep golden and the juices run clear, 25 to 30 minutes more.
  6. Rest for 10 minutes, then serve whole with rice and a simple salad.

💡 Chef tips & storage

Cornish hens make a perfect stand-in for the traditional squab — ask the butcher to save the livers for the stuffing. Cook the rice stuffing only halfway before filling the birds.
