They trace their lineage back through the Middle East to the samosas of South Asia, and every Egyptian family makes them for Ramadan, holidays, and any occasion that calls for a platter of something fried. The dough is a simple flour-and-butter affair rolled thin, though store-bought puff pastry makes an excellent shortcut, and they never last long on the table.

The pastry is thin and shatteringly crisp, giving way to a savory filling seasoned with allspice, cinnamon, and black pepper. The key is a filling that is fully cooked and completely cool before the pastries are sealed, so they fry up light and crisp without bursting. Rich but not greasy, spiced but not fiery, they are the perfect balance in a single bite. Dip them in plain yogurt or serve them with lemon, and try to stop at three; you will not.

  1. Make the dough: mix the flour and salt, then rub in the ghee until crumbly. Add the warm water and knead into a soft dough. Cover and rest for 30 minutes.
  2. Meanwhile, cook the beef with the onion and garlic in a skillet until the beef is browned and the onion is soft, about 8 minutes. Stir in the allspice, cinnamon, nutmeg, salt, pepper, and parsley, then set aside to cool completely.
  3. Roll the dough out thin on a floured surface and cut into 3-inch rounds (or 4-inch rounds for larger pastries).
  4. Place a spoonful of the filling on each round, fold it into a half-moon, and press the edges to seal. Crimp with a fork.
  5. Heat 2 inches of oil in a deep skillet to 350°F and fry the sambousek in batches until deep golden on both sides, 3 to 4 minutes total.
  6. Drain on paper towels and serve warm with yogurt or lemon wedges.

💡 Chef tips & storage

Keep the filling completely cool before sealing the pastries, or steam will pop them open in the oil. Extra sambousek freeze beautifully before frying — fry straight from the freezer, adding a minute or two.
