Irio comes from the Kikuyu people of Kenya’s central highlands, where it was born as a clever way to stretch a little food into a lot of comfort. Potatoes, green peas, and corn are boiled together and mashed until soft, then enriched with butter and a whisper of onion. What makes irio special is the texture: smooth and buttery with the occasional whole pea or kernel of corn giving a soft pop. Step by stepInstructions

  1. Place the potatoes in a large pot, cover with salted water, and boil until tender, about 15 minutes.
  2. Add the peas and corn during the last 5 minutes of cooking.
  3. Drain well and return everything to the pot over low heat for 1 minute to steam off excess moisture.
  4. In a small pan, saute the onion in the oil until golden, about 5 minutes.
  5. Mash the vegetables coarsely, then fold in the onion, butter, milk, salt, and pepper until creamy but still a little chunky.
  6. Serve warm, sprinkled with cilantro if you like.

Do not over-mash; irio should keep some texture. Leftovers can be patted into cakes and pan-fried until crisp the next day.
