Urojo, known as Zanzibar mix, is the island’s great street soup, a sunshine-yellow broth sold from big steaming pots in Stone Town. It is a bowl of everything good: tender beef, potatoes, chickpeas, and crispy fried batter, all in a tangy, warmly spiced broth. Vendors top each cup with their own signature garnishes, and regulars have favorites they defend fiercely. No two vendors make it exactly alike, and that is the joy of it.

The broth is the star, golden with turmeric and brightened with lime and a hint of mango, so it is tangy, savory, and gently warm all at once. The toppings make it a meal: soft potatoes, creamy chickpeas, and shatteringly crisp bits of fried batter floating on top. It is soup that demands to be eaten standing up, cup in hand. Ladle it into deep bowls and pile on every topping, the way the vendors do.

Step by stepInstructions

  1. Heat a little oil in a large pot and brown the beef, about 6 minutes. Add the onion and cook until soft, about 5 minutes.
  2. Add the garlic, ginger, turmeric, and cumin, and cook 1 minute.
  3. Pour in the broth and add the mango, lime juice, and salt. Bring to a simmer.
  4. Add the potatoes and simmer until just tender, about 15 minutes.
  5. Add the chickpeas and simmer 10 minutes more.
  6. Meanwhile, fry small spoonfuls of the flour batter in hot oil until golden and crisp, then drain on paper towels.
  7. Taste the soup and adjust the salt and lime.
  8. Ladle into bowls and top each with the crispy batter bits and a halved hard-boiled egg.
