Chakhchoukha comes from the Aurès mountains of eastern Algeria, where Chaoui cooks built a whole feast around torn flatbread and a fiery red sauce. Stale bread is toasted until crisp, then drenched in a slow-simmered lamb and tomato sauce so it soaks up every drop. It is the dish of weddings, feasts, and long Ramadan evenings, and every region seasons its sauce a little differently.

Bread that drinks up a spicy red sauce

Each ragged bite is half-bread, half-sauce — chewy where it has soaked and crackly where it has not — with tender lamb and chickpeas tucked throughout, and the sauce is loose enough to soak in yet thick enough to cling. The lamb is pulled apart into the sauce as it simmers, so every spoonful carries a bit of meat, a bit of chickpea, and a lot of flavor. It is bold, garlicky, and unabashedly saucy, the kind of meal that demands you eat it the moment it is served. Families traditionally share it from one enormous platter, and everyone tears off bread until the platter is wiped clean.

Step by stepInstructions

  1. Heat the olive oil in a large pot and brown the lamb in batches. Remove and set aside.
  2. Add the onions to the pot and cook until soft, about 6 minutes. Stir in the garlic, tomato paste, paprika, cumin, and cayenne and cook 3 minutes.
  3. Return the lamb to the pot, add the water, and bring to a simmer. Cover and cook until the lamb is tender, about 1 hour.
  4. Add the chickpeas and simmer 10 minutes more. Season with salt and pepper.
  5. Meanwhile, spread the torn flatbread on a baking sheet and toast at 350°F for 10 minutes until crisp.
  6. Pile the bread in a wide serving dish, ladle the hot sauce with the lamb over it, and toss gently. Let it rest 5 minutes so the bread softens.
  7. Garnish with cilantro and serve hot, with harissa on the side.

💡 Chef tips & storage

Use day-old flatbread or khobz so it soaks up sauce without turning to mush. Keep the sauce loose enough to wet the bread through — add a splash of water if it looks thick.
