Brik à l’oeuf is the snack Tunisia cannot live without — a paper-thin pastry folded around tuna, capers, and a raw egg, then fried until the outside shatters and the inside stays molten. It appears at street stalls, cafés, and family tables alike, and it is always eaten hot, the moment it leaves the oil. In Tunis it is the classic café snack with a glass of tea, and it is especially loved during Ramadan.

The pastry that shatters, the yolk that runs

The whole drama is in the contrast: crisp, blistered pastry that cracks at the touch, giving way to a warm, runny yolk that spills over the briny tuna filling. Timing is everything — two minutes too long and the magic is gone. The filling is endlessly flexible, and cheese, potato, or anchovy all have their devoted fans. Eat it immediately, torn open with your hands, with a squeeze of lemon.

Step by stepInstructions

  1. Mix the tuna, parsley, capers, and harissa in a small bowl and season with salt and pepper.
  2. Lay a wrapper on a work surface and place 1 tablespoon of the tuna mixture in the center. Make a small well in the tuna and crack an egg into it. Season the egg lightly.
  3. Fold the wrapper over into a half-moon, pressing the edges to seal and moistening them with water if needed.
  4. Fry seam-side down in 350°F oil for 1 1/2 to 2 minutes per side, until golden — the yolk should stay runny.
  5. Drain briefly and serve at once with lemon wedges.

💡 Chef tips & storage

Fry one or two at a time and eat them the second they leave the oil — the runny yolk waits for no one. If a wrapper splits, fold it tighter next time; the egg sets and seals as it fries.
