Maakouda — mashed potato cakes fried until deep golden — is the fritter of North African street corners and family kitchens from Tunis to Algiers. Vendors sell them hot from bubbling oil, and grandmothers fry them for holidays and iftar, usually in big batches because they vanish fast. In Tunisia they are often filled with a little cheese or meat, and some versions add a spoonful of canned tuna to the mash, but the plain version is perfect as it is.

Crisp shell, cloud-soft potato heart

The outside crackles; the inside is creamy mashed potato scented with garlic, cumin, and parsley. The key is thoroughly dried, properly seasoned mash — everything else is easy. Dip them in harissa or squeeze lemon over the top, and eat them the moment they are cool enough to touch. They are simple, cheap, and absolutely irresistible, the kind of food that makes a street corner smell like a celebration.

Step by stepInstructions

  1. Boil the potatoes in salted water until tender. Drain well, mash, and let cool slightly.
  2. Stir in the eggs, garlic, parsley, cumin, paprika, salt, and pepper until the mixture is smooth and thick.
  3. Shape into 8 patties about 2 1/2 inches wide and coat lightly in the flour.
  4. Fry in 350°F oil for 3 to 4 minutes per side, until deep golden. Drain on paper towels.
  5. Serve hot with harissa or lemon wedges.

💡 Chef tips & storage

Let the mashed potato cool before shaping or the patties will be sticky. Too-wet mash makes heavy cakes — spread it on a plate for a few minutes to release steam.
