Okonomiyaki means grilled as you like, and in Osaka that is exactly how it works: a batter of flour, egg, and dashi crowded with shredded cabbage, then topped on the griddle with pork, sauce, and a mountain of bonito flakes. It started as a quick street snack after the war when flour was cheap and hungry crowds lined the stalls. Today it is the party food of Japan, cooked at the table and shared, and a squirt bottle of sauce and a spatula are really all the tools you need.

  1. Whisk the okonomiyaki flour, dashi, and eggs into a smooth batter.
  2. Add the cabbage, scallions, tempura bits, and pickled ginger and fold until everything is coated. The batter should be loose and shaggy.
  3. Heat a large griddle or skillet over medium heat and oil it lightly.
  4. Pour half the batter onto the griddle and shape it into an 8-inch round. Lay 2 slices of bacon on top.
  5. Cook for 4 to 5 minutes, until golden on the bottom, then flip and cook 4 to 5 minutes more, pressing gently.
  6. Transfer to a plate and brush with okonomiyaki sauce, then zigzag mayonnaise over the top.
  7. Scatter with bonito flakes and aonori and serve hot, cut into wedges.
