Rajma chawal, kidney beans over rice, is the unofficial national comfort meal of North India, and in Punjab it is practically a religion. Red kidney beans are simmered until creamy in a thick, warmly spiced gravy, then ladled over steaming rice with a pat of butter melting on top. Every Punjabi household has its own recipe, passed down and argued over with great affection.

The beans are tender but hold their shape, coated in a gravy that is thick, earthy, and gently spiced with cumin, coriander, and garam masala. A few beans get mashed into the sauce to give it body, so every spoonful clings to the rice. It is simple, filling, and deeply satisfying, the kind of meal that makes you slow down and enjoy every bite. A knob of butter melting into the rice is traditional and absolutely worth it. Serve it with a simple salad or some pickled onions for a complete plate.

Step by stepInstructions

  1. Drain and rinse the soaked beans, then place them in a pot with 6 cups of water. Bring to a boil and simmer for 45 minutes, until tender. Reserve 1 cup of the cooking liquid.
  2. Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them sizzle, then add the onion and cook until golden, about 7 minutes.
  3. Stir in the ginger-garlic paste and green chilies and cook for 1 minute, then add the tomato puree, turmeric, and ground coriander. Simmer for 8 minutes.
  4. Add the cooked beans with the reserved liquid, salt, and garam masala. Simmer for 15 minutes, mashing a few beans against the side of the pot to thicken the gravy.
  5. Stir in the cilantro and serve hot over steamed rice with a pat of butter.

💡 Chef tips & storage

Cook the beans until completely soft but still whole; the gravy gets its body from mashing a few beans into it. Rajma tastes even better reheated the next day.
