Banana Halwa - ghee-rich banana fudge with cardamom

Banana halwa is the deep amber sweet of Kerala, made from ripe cooking bananas, sugar, and ghee, stirred slowly until it turns into a glossy fudge. It is a festival favorite sold at every sweetshop in the state and made at home for weddings and Onam. The aroma alone is enough to gather the family in the kitchen, and it is worth the stirring.

Glossy, buttery, and intensely fruity

The halwa is soft and fudgy, almost jammy, with the natural sweetness of ripe bananas deepened by slow caramelization and the richness of ghee. Cardamom and toasted cashews round it out, and it sets into slices that melt on the tongue. A small square goes a long way, and one is never quite enough, so cut it small and hide the tin. Kept in the fridge wrapped in parchment, it lasts for weeks — though in most homes it is gone long before that.

  1. 1. Heat 2 tablespoons of the ghee in a heavy pan and toast the cashews and raisins until golden. Remove and set aside.
  2. 2. In the same pan, cook the mashed bananas with the water over medium heat, stirring, until the mixture darkens and thickens, about 10 minutes.
  3. 3. Add the sugar and cook, stirring constantly, until it dissolves and the mixture turns glossy and deep amber, 10 to 12 minutes.
  4. 4. Add the remaining ghee, a few spoonfuls at a time, stirring well after each addition, until the halwa pulls away from the pan.
  5. 5. Stir in the cardamom, saffron (if using), cashews, and raisins.
  6. 6. Pour into a greased pan, let set for 1 hour, and cut into squares.

💡 Chef tips & storage

Use very ripe, sweet bananas — the darker the peel, the better the flavor. Stir constantly during the final stage so the ghee does not separate and the halwa does not scorch.
