Beef Rendang - beef simmered in coconut milk and spice paste

Rendang is the grand old lady of Malaysian cooking, born in the Minangkabau highlands of Sumatra and adopted with fierce pride across the whole Malay peninsula. It is the dish that appears at weddings, Eid feasts, and every family gathering, simmered for hours until the coconut milk surrenders into a dark, concentrated glaze that clings to the beef. Every cook has a version of the spice paste, and every version is argued over with genuine affection, which is exactly how it should be.

Slow-cooked beef with a glossy, spice-dark coat

The beef turns impossibly tender while the sauce reduces into a rich, almost dry coating that hugs every piece, and the flavor is a deep chorus of galangal, lemongrass, lime leaves, chilies, and a quiet sweetness from palm sugar and tamarind. Each bite is intense and complex, the kind of warmth that settles in your chest, and it is best eaten with plain steamed rice and nothing to distract you. Make a big pot, because it keeps for days and somehow tastes even better the morning after.

One of the great curry traditions — mapped in our World of Curries guide.

Step by stepInstructions

  1. Blend the shallots, garlic, galangal, turmeric, and chilies with a splash of water into a smooth paste.
  2. In a heavy pot, toast the spice paste over medium heat until fragrant, 3 to 4 minutes, then add the cinnamon stick and lemongrass.
  3. Add the beef and coconut milk. Bring to a gentle simmer and cook, uncovered, for 1 1/2 hours, stirring every 10 minutes so the milk does not split.
  4. Add the coconut cream, lime leaves, palm sugar, tamarind, and salt, and lower the heat.
  5. Continue cooking, stirring more often, until the liquid evaporates and the oil rises to the surface, about 45 minutes to 1 hour.
  6. The rendang is ready when the beef is fork-tender and coated in a dark, almost dry glaze. Rest 10 minutes before serving with steamed rice.

💡 Chef tips & storage

Do not rush the final stage; the rendang is done only when the oil rises to the surface. It keeps for days and actually improves overnight.
