Ayam percik is the grilled chicken of Kelantan, on the northeast coast of Malaysia, where the marinade is a coconut-milk basting sauce as much as it is a rub. The chicken is grilled slowly and basted again and again until the skin turns dark, sticky, and charred at the edges, and the sauce is simmered first, so the spices bloom before they ever touch the chicken, which is half the flavor. It is a festival dish, cooked over open fires at weddings and market days, and it is one of those dishes that looks simple and tastes anything but.

The meat stays juicy because of the coconut milk, and the spice paste of chilies, galangal, and lemongrass gives it a warm, floral heat, while the basting builds layer after layer of flavor.   1. Blend the shallots, garlic, galangal, chilies, lemongrass, coriander, cumin, and turmeric into a paste.
  2. Simmer the paste with 1 cup of the coconut milk, palm sugar, and salt for 10 minutes, until slightly thickened. Cool.
  3. Toss the chicken in the marinade and chill for at least 1 hour, or overnight.
  4. Grill over medium heat, basting with the remaining coconut milk and turning often, until the skin is charred and the chicken is cooked through, 20 to 25 minutes.
  5. Boil any leftover marinade for 2 minutes to serve as extra sauce.
  6. Serve with rice and cucumber slices.
