  1. Boil the potatoes in salted water until just tender, 10 to 12 minutes. Drain well and let them steam dry for a few minutes.
  2. Heat the oil in a small pan. Add the cumin seeds and cook until they sizzle, then stir in the garlic and green chilies and cook 30 seconds.
  3. Pour the hot oil over the warm potatoes.
  4. Add the chili powder, turmeric, sesame seeds, salt, and lemon juice and toss gently to coat.
  5. Fold in the red onion and cilantro and serve warm or at room temperature.
