Lumpiang Shanghai is the fried, bite-size cousin of the fresh lumpia, and the undisputed star of every Filipino gathering. Thin spring roll wrappers are filled with a savory blend of ground pork, shrimp, and vegetables, rolled into tight little cigars, and fried until the shells shatter. They are the first thing guests reach for at any party, and the first thing to run out, so home cooks make them by the hundred for holidays, rolling and frying until the platters pile high.

Crisp shells, juicy filling

Each roll is a perfect study in contrast: a delicate, crackling wrapper that gives way to a moist, garlicky, savory center. The carrots and onions keep the filling light, the soy and pepper keep it deep, and the golden crunch keeps everyone reaching for another. Serve them with a squeeze of calamansi or a dunk in sweet chili sauce, and watch them vanish all over again.

Step by stepInstructions

  1. In a large bowl, combine the pork, shrimp, carrot, onion, garlic, egg, soy sauce, salt, and pepper. Mix until everything is well blended.
  2. Lay one lumpia wrapper on a work surface with a corner pointing toward you and place about 1 tablespoon of filling in a log shape near the bottom corner.
  3. Fold the bottom corner over the filling, roll once, then fold in the two side corners and continue rolling tightly to the end.
  4. Dab a little water on the final corner and press to seal. Repeat with the remaining filling and wrappers.
  5. Heat the oil in a deep pot to 350°F and fry the rolls in batches for 4 to 5 minutes, turning once, until golden brown and crisp.
  6. Drain on paper towels and serve hot with sweet chili sauce or spiced vinegar for dipping.

💡 Chef tips & storage

Keep the wrappers covered with a damp towel while you work so they do not dry out and crack. Freeze uncooked rolls on a baking sheet, then bag them — fry straight from frozen, adding a couple of minutes.
