Bruschetta originated in central Italy as a way for farmers to test the quality of freshly pressed olive oil, drizzled over grilled bread. The tomato-topped version most Americans know became popular in the U.S. throughout the 1980s and 1990s as Italian-American cuisine grew in popularity.
