  1. In a large bowl, whisk together the banana ketchup, soy sauce, calamansi juice, brown sugar, garlic, pepper, and lemon-lime soda. Reserve 1/2 cup of the marinade for basting.
  2. Add the pork strips and toss to coat. Cover and marinate in the fridge for at least 2 hours, or overnight.
  3. Thread the pork strips onto the soaked skewers, weaving them so they lie flat.
  4. Heat a grill or grill pan to medium-high and oil the grates. Grill the skewers for 3 to 4 minutes per side, basting with the reserved boiled marinade, until charred at the edges and cooked through.
  5. Mix the vinegar with the sliced shallot for the dipping sauce.
  6. Serve the skewers hot with the vinegar dip on the side.

💡 Chef tips & storage

Soak the bamboo skewers in water for 30 minutes so they do not burn on the grill. Set aside a little marinade before adding the raw pork and boil it for 2 minutes to use as a basting sauce.
