Beef tapa is the salty-sweet cured beef that anchors the most beloved of Filipino breakfasts — tapsilog, the trio of tapa, sinangag garlic rice, and a fried egg. The meat marinates in soy sauce, calamansi, and lots of garlic, then pan-fries until the edges caramelize into something irresistible. Tapsilog is so beloved it has its own name, a portmanteau of tapa, sinangag, and itlog, and its own place on every breakfast menu in the country.

Salty, sweet, and garlicky through and through

Each slice is chewy-tender with a sticky, caramelized glaze from the brown sugar, brightened by calamansi and punched up by a serious amount of garlic. Against the crisp fried egg and garlicky rice, it is a perfect salty-savory breakfast balance. It is the breakfast that sticks with you all morning, in the best possible way — pair it with sliced tomatoes if you want a little brightness, and make extra tapa while you are at it, since it keeps for days and makes a great lunch.

Step by stepInstructions

  1. In a bowl, combine the beef with the soy sauce, brown sugar, garlic, black pepper, and calamansi juice. Marinate in the fridge for at least 2 hours, or overnight.
  2. Heat 1 tablespoon of the oil in a large skillet over high heat and fry the beef in a single layer, working in batches, for 2 to 3 minutes per side, until browned with caramelized edges. Set aside.
  3. For the garlic rice, heat the remaining oil in the same skillet and fry the sliced garlic until golden. Add the rice and stir-fry for 3 to 4 minutes, until hot and fragrant.
  4. Fry the eggs sunny-side up or over easy in the butter.
  5. Plate the rice, top with the tapa and a fried egg, and serve with vinegar on the side if you like.

💡 Chef tips & storage

Slice the beef thin against the grain or it will be chewy. After frying, add a splash of water to the pan and scrape up the glaze — pour it over the rice for extra flavor.
