Sel roti is the taste of festival mornings in Nepal, especially during Dashain and Tihar, when the whole household gathers around the frying pan. A sweet batter of rice flour, banana, and cardamom is poured in a slow spiral into hot oil and fried into crisp golden rings. Grandmothers make it look effortless, swirling the batter from a small pot in one smooth motion while the children crowd close. It is the smell that means celebration has begun.

The outside turns shatteringly crisp while the inside stays soft and almost cakey, with a gentle sweetness and a whisper of cardamom in every bite.
