  1. Heat the ghee in a wide skillet over medium heat. Add the cumin seeds and cook until they sizzle.
  2. Add the garlic and chili and cook 1 minute, until the garlic is golden at the edges.
  3. Add the asafoetida, if using, and the turmeric, then add the spinach in handfuls, stirring until it wilts.
  4. Pour in the water, add the salt, and cook 3 to 4 minutes, until the spinach is tender and most of the liquid has cooked off.
  5. Off the heat, stir in the lemon juice and serve hot.
