Chatamari is the Newari answer to pizza — a thin, crisp crepe of rice flour spread on a hot griddle and topped with seasoned minced meat, egg, and tomato. It is a festival and feast-day food of the Kathmandu Valley, cooked on the spot and eaten hot off the pan, often with a cold drink nearby. The toppings are simple, but the contrast of crisp base and rich topping is pure genius. Children love it, grandparents love it, and nobody argues.

The crepe turns lacy and shatter-crisp at the edges while staying tender in the middle, and the egg sets into a soft, savory blanket. Minced chicken spiced with turmeric and cumin, slices of tomato, and a scatter of green chili make every bite interesting. It is the kind of food that is humble and spectacular at the same time — proof that a few good ingredients, handled well, are enough.

  1. Whisk the rice flour, salt, and water into a thin, pourable batter the consistency of crepe batter. Rest 15 minutes.
  2. In a small bowl, mix the ground chicken, onion, turmeric, and cumin.
  3. Heat a large nonstick skillet over medium-high heat and brush with a little oil. Ladle in a quarter of the batter and swirl it into a thin 8-inch round.
  4. Cook 1 minute, then scatter a quarter of the chicken mixture over the top, followed by tomato slices and chili.
  5. Crack an egg over the top, or pour a beaten egg over it, and cover the pan. Cook 3 to 4 minutes, until the egg is set and the base is crisp and golden underneath.
  6. Slide onto a plate, scatter with cilantro, and serve hot. Repeat with the remaining batter.

💡 Chef tips & storage

The batter should be thin — add water a spoonful at a time if it feels thick. The base cooks on the first side only; the steam from the lid finishes the top.
