Kinema is the fermented soybean wonder of eastern Nepal, where beans are boiled, wrapped in leaves, and left to ferment into a sticky, fragrant paste. It is a nutritional powerhouse and a flavor bomb, simmered simply with onions, garlic, and spices until it turns into a thick, glossy curry. Step by stepInstructions

  1. If your kinema is very sticky and strong, rinse it briefly; if mild, use it as is.
  2. Heat the oil in a pan over medium heat. Add the cumin seeds and cook until they sizzle.
  3. Add the onion and cook until soft, 4 minutes, then add the garlic, ginger, turmeric, chili powder, and ground cumin and cook 1 minute.
  4. Add the tomato and cook 3 minutes, mashing it into the spices.
  5. Add the kinema, water, and salt. Simmer 15 minutes, stirring now and then, until the sauce thickens and the kinema softens.
  6. Scatter with cilantro and serve hot with rice.

💡 Chef tips & storage

Kinema can be hard to find outside Nepal; a good substitute is simmered soybeans with a spoonful of miso stirred in. Do not boil it hard — gentle simmering keeps the beans whole.
