Boston cream pie is a misnomer and a masterpiece: it is not a pie at all but a round yellow sponge cake split and filled with silky vanilla pastry cream, then topped with a glossy chocolate glaze. It was invented in 1856 by pastry chef M. Sanzian at Boston’s Parker House Hotel, and in 1996 Massachusetts named it the official state dessert. More than a century and a half later, it is still the dessert that proves simple ingredients, done perfectly, beat anything fancy.

Why this recipe works: Each layer earns its place: a light, tender sponge that soaks up a little rum or vanilla syrup; a velvety pastry cream that is rich but not heavy; and a thin layer of dark chocolate ganache that sets into a glossy, crackling top. Pour the ganache while it is still warm and pourable so it settles into an even, glossy layer, then chill the assembled cake for at least 2 hours before slicing — use a hot, wet knife for clean cuts.

Variations and storage

Add a handful of raspberries to the filling, spike the pastry cream with a little bourbon, or top with white chocolate instead. Boston cream pie keeps 2 to 3 days in the fridge, though the ganache is shiniest the day it is made. Serve chilled, straight from the fridge.

  1. Preheat the oven to 175°C and grease two round cake pans.
  2. Whisk flour, baking powder, and salt. Beat eggs and sugar until pale, then fold in dry ingredients alternately with warm milk and melted butter.
  3. Divide between pans and bake 20-22 minutes until golden. Cool completely.
  4. For the filling, whisk milk, sugar, cornstarch, and egg yolks in a saucepan over medium heat until thickened, then stir in vanilla and chill.
  5. Spread the cooled filling between the cake layers.
  6. Warm the cream, pour over chocolate chips, stir until smooth, and pour the glaze over the top of the cake.
