Samoan coconut candy is the sweet made for sharing, cooked in big batches at home and wrapped in small parcels for guests and children. It uses the island’s most abundant gift — the coconut — and turns it into glossy, chewy confection with nothing more than sugar and patience. At village markets it is sold in little bags, and it never lasts long.

What makes it great: as the coconut and sugar cook down, they turn into a sticky, caramelized mass that is intensely coconutty and faintly toasty. The texture is chewy and satisfying, like the best caramel you have ever had, with real coconut shreds in every bite. A single square is enough, but nobody stops at one.

Step by stepInstructions

  1. Line a baking sheet or tray with parchment paper.
  2. In a heavy saucepan, combine the coconut cream, brown sugar, butter, and salt.
  3. Bring to a simmer over medium heat, stirring constantly, and cook for 8-10 minutes until the mixture thickens and darkens slightly.
  4. Stir in the grated coconut and vanilla and continue cooking, stirring often, for 10-15 minutes until the mixture is very thick, glossy, and pulls away from the sides of the pan.
  5. Spread the mixture onto the prepared tray in an even layer about 1/2 inch thick.
  6. Cool completely until set, then cut into squares and store in an airtight container.

The candy hardens as it cools, so stop cooking while the mixture is still glossy and spoonable. Store in a sealed container so the squares stay chewy.
