Country fried steak, also called chicken fried steak in Texas, has roots in German and Austrian immigrant cooking traditions of the 19th-century American South and Southwest, particularly the schnitzel-style breading technique. It became a defining Texan and Southern comfort food staple by the 20th century, traditionally smothered in creamy white gravy.

A tenderized cube steak is breaded and fried until crispy, then smothered in a rich, peppery white gravy.

Step by stepInstructions

  1. Mix the flour, paprika, salt, and pepper in a shallow dish.
  2. Whisk the buttermilk and eggs in another dish.
  3. Dredge each steak in flour, then buttermilk, then flour again.
  4. Heat oil in a skillet and fry the steaks 3-4 minutes per side until golden and crisp. Drain and set aside.
  5. Pour off all but 3 tablespoons of oil, whisk in the flour, and cook 1 minute.
  6. Gradually whisk in the milk, simmering until thickened, and season generously with black pepper. Pour gravy over the steaks.

Double-dredging the steak (flour, buttermilk, flour) creates the thickest, crunchiest crust. Don't rush the gravy — whisk constantly to avoid lumps as it thickens.
