Rfissa is the dish Moroccan women traditionally make for new mothers, and the reason is in the bowl: fenugreek, lentils, and a warm, gingery broth believed to be strengthening and soothing. But it is too good to save for special occasions. Shredded chicken and lentils are ladled over torn pieces of msemen, which soak up the broth like the best bread pudding you ever had.

The fenugreek gives the broth a deep, slightly earthy savor that is hard to describe and impossible to forget, while ginger keeps everything bright. Step by stepInstructions

  1. Rinse the soaked fenugreek seeds. Put the chicken, onions, fenugreek, lentils, ginger, turmeric, saffron, smen, salt, and pepper in a large pot with the broth.
  2. Bring to a simmer, cover, and cook 1 hour 30 minutes, until the chicken is very tender and the lentils are soft.
  3. Remove the chicken and keep it warm. Simmer the sauce uncovered until it thickens slightly, about 10 minutes.
  4. Tear the msemen into pieces and arrange them in a deep serving dish.
  5. Ladle the lentils and sauce over the msemen, top with the chicken, and scatter with cilantro. Serve hot.

💡 Chef tips & storage

Soak the fenugreek seeds overnight and rinse them well, they soften and lose their bitterness as they cook. If fenugreek is hard to find, reduce it to 2 tablespoons rather than skipping it, it is the soul of the dish.
