Cathead Biscuits

Extra-large, fluffy buttermilk biscuits, named for their generous fist-sized shape.

Big as a cat’s head

No rolling, no cutting — just a soft dough shaped into biscuits about the size of a cat’s head, baked until tall and fluffy.

Step by stepInstructions

  1. Preheat the oven to 450°F.
  2. Cut the cold butter into the flour with a pastry blender until pea-sized crumbs form.
  3. Stir in the cold buttermilk until a shaggy dough forms.
  4. Turn onto a floured surface and knead 4-5 times; pat into a 1-inch-thick round.
  5. Cut into 6 large biscuits with a knife (or pinch off pieces) and place touching in a greased skillet or baking pan.
  6. Bake 15-18 minutes until tall and golden. Brush with melted butter and serve hot.

💡 Chef tips & storage

Keep everything cold for the flakiest layers. Touching biscuits rise taller — that's the cathead secret.
