  1. Heat the oven to 375°F (190°C).
  2. Whisk the eggs, milk, salt, and pepper.
  3. Heat the oil in an oven-safe skillet and cook the onion 4 minutes. Add the vegetables and cook until just tender, 5 minutes. Add the garlic.
  4. Pour the eggs over the vegetables, scatter the tomatoes and half the cheese, and cook 2 minutes without stirring.
  5. Top with the remaining cheese and bake 15-18 minutes until set. Cool 5 minutes, then scatter with herbs and slice.

Use whatever's in season — zucchini, peppers, mushrooms, asparagus all work. Cook the vegetables until just tender before adding the eggs.
