Step by stepInstructions

  1. Heat the oven to 425°F (220°C).
  2. Whisk the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture looks like coarse crumbs.
  3. Add the buttermilk and stir until just combined.
  4. Turn out onto a floured surface and fold the dough over itself 3-4 times. Pat to 1 inch thick and cut with a biscuit cutter.
  5. Bake 12-15 minutes until tall and golden. Brush with melted butter.

Keep the butter and buttermilk ice cold — that's what creates the flaky layers. Handle the dough as little as possible and press the biscuits straight down without twisting.
