Bannock has a long and layered history in Canada, from the oatcakes of Scottish traders to the versions made by Indigenous communities who adapted the flour to their own cooking traditions over open fires. On the West Coast, bannock is a beloved part of First Nations gatherings, cooked in cast-iron pans, on sticks over the fire, or baked in the coals of a beach campfire.

What makes it great is its humble versatility: crisp and golden on the outside, soft and steaming on the inside, and delicious with just about anything. Slather it with butter and salal jam for breakfast, serve it alongside a bowl of salmon chowder, or eat it warm with honey while the pan is still hot. Simple, honest food that tastes like the outdoors.

Step by stepInstructions

  1. Whisk the flour, baking powder, and salt together in a large bowl.
  2. Stir the melted butter, honey, and warm water into the dry ingredients until a soft, shaggy dough forms.
  3. Turn the dough onto a floured surface and knead gently 6 to 8 times, just until smooth — don't overwork it.
  4. Shape the dough into a round about 1 inch thick, then score it lightly with a knife in a cross pattern.
  5. Melt a knob of butter in a cast-iron skillet over medium heat and cook the bannock for 6 to 8 minutes per side, until deep golden and cooked through.
  6. Transfer to a plate, tear it open while hot, and serve with butter and jam.

💡 Chef tips & storage

Keep the heat medium — too high and the outside burns before the middle cooks. For a campfire version, wrap the dough around a green stick and rotate it over the coals until golden.
