Fried Okra

Fried okra is the Deep South’s favorite way to eat the vegetable everyone loves to debate — fresh okra sliced, coated in cornmeal, and fried until golden and crunchy, with none of the slime. It’s the side that disappears first at every fish fry.

Step by stepInstructions

  1. Whisk the cornmeal, flour, garlic powder, cayenne, salt, and pepper.
  2. Dip the okra in the buttermilk, then toss in the cornmeal mixture until well coated.
  3. Heat 1 inch of oil in a skillet to 365°F (185°C).
  4. Fry the okra in batches 3-4 minutes until golden and crisp. Drain on paper towels.
  5. Season with a little extra salt and serve hot.

💡 Chef tips & storage

Dry the okra thoroughly before coating — moisture makes it slimy. Fry in small batches and serve immediately while it's crunchy.
