The paniolo’s jerky

Hawaiian cowboys (‘paniolos’) made this sweet-salty beef jerky — marinated, dried, and lightly smoked to chewy perfection.

Step by stepInstructions

  1. Whisk the soy sauce, brown sugar, garlic, ginger, pepper, and liquid smoke.
  2. Marinate the beef slices at least 4 hours or overnight.
  3. Preheat the oven to 200°F. Pat the beef dry and brush with oil.
  4. Place on a wire rack over a baking sheet and bake 2 1/2-3 hours, until dry but still pliable.
  5. Cool completely; slice into strips and store in an airtight container.

💡 Chef tips & storage

Slicing with the grain gives that classic chewy bite. Bake low and slow — the beef should bend, not snap.
