Boudin is the sausage at the heart of Cajun country — a coarse blend of pork, rice, and the holy trinity of onion, celery, and bell pepper, seasoned generously and stuffed into casings. It’s sold by the link at gas stations across Louisiana, and it’s one of the state’s greatest foods.

Chef Emily presents Boudin

The sausage of Cajun country

Pork and rice sausage loaded with Cajun seasoning — boudin, Louisiana’s beloved link, best eaten warm from the casing.

Step by stepInstructions

  1. Simmer the pork (and liver, if using) in water until tender, about 20 minutes. Reserve 1 cup of the cooking liquid.
  2. Grind or finely chop the cooked pork. Sauté the onion, celery, and bell pepper until soft, about 5 minutes, then add the garlic.
  3. Combine the pork, vegetables, rice, Cajun seasoning, cayenne, salt, and pepper. Moisten with the reserved liquid until the mixture holds together.
  4. Stuff into sausage casings and twist into 6-inch links, or shape into patties.
  5. To serve, simmer the links in water 15 minutes, then grill or pan-fry until the casings brown.

💡 Chef tips & storage

If you don't have casings, form the mixture into patties and pan-fry them — equally delicious. Serve with hot sauce and crackers.
