Thick Chicago deep dish pizza with chunky tomato sauce and melted mozzarella

A thick, buttery crust piled high with mozzarella, sausage, and chunky tomato sauce, baked deep in a heavy skillet.

The Windy City’s tallest pie

Deep dish is a full meal disguised as pizza — a flaky, cornmeal-flecked crust, layer of cheese, and slow-simmered sauce that needs a fork and knife.

Step by stepInstructions

  1. Dissolve the yeast and sugar in the warm water and let stand 5 minutes. Mix in the flour, cornmeal, salt, and olive oil; knead 5 minutes until smooth. Cover and rise 1 hour.
  2. Cook the sausage, onion, and bell pepper in a skillet until the sausage is browned; set aside.
  3. Simmer the crushed tomatoes, tomato paste, oregano, basil, and garlic powder 15 minutes to thicken.
  4. Preheat the oven to 425°F. Press the dough into a generously oiled 12-inch cast-iron skillet, pushing it up the sides.
  5. Layer the mozzarella, then the sausage mixture, then the sauce, and finish with Parmesan.
  6. Bake 30-35 minutes until the crust is golden and the sauce is bubbly. Rest 10 minutes before slicing.

💡 Chef tips & storage

The cheese goes under the sauce — that's what makes deep dish deep dish. A well-oiled pan gives the crust its signature fried, crisp edge.
